Simple Vegan Curry

I LOVE curry!! It has so much flavor and is definitely satisfying. I love how customizable it is. You can add whatever kind of potato and it is sure to be amazing. Veggies also make this meal super delicious- almost all of them would work with this meal.....except maybe celery. I just can't imagine celery and curry going well together but who knows, maybe it would surprise me. Butternut squash is one of my favorite add ins to this meal, it makes it so sweet and compliments the flavor well.
ANYWAYS.... This is a very simplified version of curry because I was at the beach and well, who wants to be spending their time cooking when they have a beach right in front of them?!?! So take this recipe and add whatever your heart desires to it! Or just keep it simple, that works too:)

SUPER SIMPLE CURRY RECIPE
2 cups water
1 cup red lentils
2 T curry seasoning
1.5 T tomato paste (I've left this out before and it still taste good)
1 can of drained garbanzo beans
1 can of coconut milk
2 potatoes (I used white sweet potatoes)
Salt to taste (add right before you eat it)
*Some other great ingredients would be: butternut squash, carrots, diced tomatoes, tofu, cauliflower, broccoli, spinach, and zucchini. If you add zucchini or spinach, add it after it's done cooking and allow it to sit in there for 5 minutes.
Add all ingredients except garbanzo beans to a pot . Bring to a boil. Once boiling, reduce heat to low and allow to simmer covered for 30 minutes. Then add garbanzo beans and simmer for another 10 minutes or until potatoes have cooked through and lentils have soaked up water. Serve and add salt to taste!
*You can add all ingredients to crockpot and cook on low for 4 hours or add all ingredients to Instant Pot on manual for 15 minutes
When I am at home I always cook mine in the instant pot.
