Oil Free Hashbrowns

I LOVE hashbrowns!! They are such a classic breakfast side dish but I believe they deserve all the attention. They are the main course at my house;) Usually hash browns get a bad rep of being unhealthy, but not these!! Most hash browns are full of oil making them high in fat and calories. My hashbrowns are full of nutrients and will leave you feeling satisfied and energized.

Oil Free Hashbrown Recipe
1 bag of hashbrowns (only ingredient:potatoes)
1 bag of frozen bell peppers
1 small yellow onion, chopped
2 scallions, chopped
4 cloves of garlic, minced
1 T fresh basil, chopped
1/2 T fresh dill, chopped
2 t cumin
2 t paprika
Preheat oven to 400 degrees F. Mix all ingredients together and place on a nonstick baking sheet. Bake for 30-40 minutes or until desired crispness (I don't like mine super crispy ). I serve mine with ketchup and hot sauce!
*The veggies and spices are all customizable.
*Some of my other favorite add ins are : a handful of spinach, diced tomatoes, and black beans
