Healthy Rocky Road Ice-cream (Vegan)

Ice-cream used to be my guilty pleasure. Now it still brings me all the pleasure but with zero guilt:) Not only is this ice-cream extremely delicious, it is also loaded with nutrients! It's healthy enough to eat for breakfast!

My favorite part about this ice-cream is the variety of textures and flavors. The base is of course chocolate peanut butter because that is my favorite combo ever:) What sets this apart though is the roasted peanuts and dates. The peanuts give it that perfect crunch while the dates give it a chewy caramel flavor.

Rocky Road Ice-cream Recipe

  • 2-3 frozen, ripe bananas (you want them to be very spotty when you freeze them)

  • 1 T cocoa powder

  • 1 t peanut butter

  • 2 dates

  • 1/4 cup roasted peanuts

Add bananas, cocoa powder, and peanut butter to a blender.

Blend until smooth, adding a bit of water or nondairy milk as needed. (Add as little as possible so that the ice-cream isn't runny)

Once smooth, add the dates and peanuts.

Blend or pulse it just enough to get the dates and peanuts chopped

(you want them to be in small chunks).

Enjoy!

*If you accidentally add too much liquid and your ice-cream is runny, just freeze it for a bit and enjoy later:)
