Caramel Granola (Oil free, Vegan)

I make granola every week to snack on and to add to smoothie bowls. I made caramel this week too and decided to replace the water in my granola with the caramel!! It was delicious!! I love caramel flavored everything so I knew I would love it!

I didn't take a picture of it so this is just a picture of my regular granola but they look the exact same:)

Here's a video of me making my regular granola. Just replace the water with the caramel for this recipe:)

Caramel Granola Recipe

  • 3 cups of rolled oats

  • 30 dates, pitted

  • 3/4 cups of caramel (click HERE for the recipe or scroll down)

  • a few pinches of salt (if you want a salted caramel flavor)

  • A few sprinkles of cinnamon (optional)

  • 1 t vanilla

Make the caramel and set in fridge until ready to use. You will want to soak your dates in hot water for at least 10 minutes unless you have a food processor. Preheat the oven to 350 F. Add all the ingredients to a food processor or blender and blend until the dates are chopped and the ingredients have combined a bit. Crumble the mixture onto a nonstick pad. Spread out evenly. Bake for 20-25 minutes. Allow to cool and store in an airtight container.

The food processor is very affordable. The Vitamix is definitely an investment but I use mine everyday and definitely think it's worth it!!

I definitely recommend getting nonstick pads as well because it makes oil free cooking easier and you don't have to keep buying parchment paper! Click HERE to see the ones I use.

Caramel Sauce Recipe

  • 24 pitted dates (soak in hot water for 30 min or more if you have time)

  • 1 can of coconut cream

  • 3/4 cup of sugar (I used coconut sugar)(it is good without the sugar so this is optional if you want it to be healthier)

  • 1 t vanilla

  • a couple pinches of salt

After dates have soaked, add them to a blender along with the the rest of the ingredients Blend until smooth. Add the sauce to a small pot and bring to a boil (stir frequently) Once boiling, reduce to low for 10 minutes, stirring occasionally. Add to a jar and refrigerate until ready to use. Serve warm or cold.
