Buffalo Quinoa Lettuce Wraps

This is honestly one of the easiest meals ever! All you do is throw all the ingredients into one pot and its done in less than 25 minutes with minimum effort, which is super nice for busy days!

Buffalo Quinoa Lettuce Wraps Recipe
1 cup of quinoa
2 cups of water
1 onion, chopped
2 bell peppers, chopped
1 can of black beans, rinsed and drained
1 can of corn
3 T of spice (I used a buffalo blend for this but fajita blend, taco blend, bbq blend, etc are all good)
Lettuce leaves for wrapping
Combine all ingredients except for lettuce leaves into a large pot. Bring to a boil on high, then reduce to low. Simmer, covered, for 20 minutes or until quinoa has soaked up the water. Once its done, add to lettuce leaves and enjoy:)
*You can also make this in the rice cooker!! Just add all the ingredients and press "white rice"!
Side note: This pairs perfectly with my cauliflower wings and 2 minute ranch recipe:)
