Vegan Stuffing

This was EVERYONE'S favorite dish at my Thanksgiving feast!! The blend of flavors is absolutely incredible, you will not be disappointed if you make this! We ended up making this again a few days later because we could not get enough of it!
Stuffing Recipe
Prep Time: 10 minutes
Total Time: 40 minutes
4 stalks of celery, chopped
1 onion,chopped
2 T vegan butter
1 green apple, peeled, cored, and chopped
1 cup of dried cranberries
1.5 T fresh sage, chopped
1.5 t ground thyme
4 cups of veggie broth
1 package of dried, chopped bread (or dry out a loaf yourself)
Preheat oven to 400 degrees. Sauté the celery and onion in butter for about 4 minutes. Add the apple and continue cooking for about 3 minutes. Turn off the heat and mix in the cranberries, sage, and thyme. Place bread in a 9 x11 casserole dish (I greased mine but you can skip this step to keep it oil free). Pour in the veggie mixture and give it a stir. Pour the veggie broth over the bread and veggie mixture and give it another stir. Bake for 30 minutes and enjoy!
