Vegan Spinach and Artichoke Dip

This is a simple and delicious app to bring to any party! My family and I made a vegan and non-vegan version of this for Christmas Eve this year and everyone preferred the vegan version!! You could serve this with pita bread, chips, veggies, or use it as a spread on sandwiches!

Vegan Spinach and Artichoke Dip Recipe
1 package of extra firm tofu
2 T nutritional yeast
1 medium yellow onion
2 cloves of garlic
2.5 t salt
1/2 of a lemon's juice
1 t oregano
1/2 T salt free garlic and herb seasoning (Italian would work too)
1 small frozen package of chopped spinach (you could use a 2 cups of freshly chopped spinach)
15 oz jar or frozen box of artichoke hearts (I used frozen and thawed it out).
Preheat oven to 350. Add all ingredients except spinach and artichokes into a food processor and process until desired consistency. Place in a bowl. Add spinach and artichokes to the food processor and pulse until in small chunks. Add to the bowl and mix through until well combined. Place in a casserole dish and bake for 20 minutes. Serve and enjoy:)
I made this meal in my food processor. I prefer using a food processor to my blender because it makes it the perfect consistency. My blender is very powerful and makes meals like this too thin for my liking. To check out the food processor I use, click HERE.
