Vegan Acai Bowl with Oil-Free Granola

Acai Bowls are one of my absolute favorite breakfasts! They are so refreshing, especially on hot days. I definitely still eat them during the winter though, just sitting next to a space heater or covered in a blanket;)

Acai Bowl Recipe

  • 2 packets of frozen acai (you can substitute 2 cups of any frozen fruit)

  • a few pieces of another frozen fruit (I do pineapple, banana, or strawberry) (optional)

  • 1 handful of spinach (optional, doesn't change the taste)

  • fruit for topping-I like bananas, kiwis, and strawberries

  • maple syrup for topping (optional)

  • granola

Add acai, frozen fruit, and spinach to a blender. Blend up until smooth, adding a little water as needed. Top with desired toppings! Enjoy:)

Granola Recipe

  • 3 cups of rolled oats

  • 30 dates, pitted

  • 3/4 cups of water

  • 1 T maple syrup (optional)

  • A few sprinkles of cinnamon

  • 1 t vanilla

  • Optional: nuts, coconut flakes, dried fruit, seeds, etc.

Unless you have a high powered blender, you will want to soak your dates in water for at least 10 minutes. Preheat the oven to 350 F. Add all the ingredients to a food processor or blender and blend until the dates are chopped and the ingredients have combined a bit. Crumble the mixture onto a nonstick pad. Spread out evenly. Bake for 20-25 minutes. Allow to cool and store in an airtight container.
