Vegan, Oil-Free Granola

I make this granola almost every week! It's perfect for road trips, hiking, camping, snacking throughout the day, and on top of acai/smoothie bowls!! Click the video below to see how it's made or scroll down for the recipe!

Granola Recipe

  • 3 cups of rolled oats

  • 30 dates, pitted

  • 3/4 cups of water

  • 1 T maple syrup (optional)

  • A few sprinkles of cinnamon

  • 1 t vanilla

Unless you have a high powered blender, you will want to soak your dates in water for at least 10 minutes. Preheat the oven to 350 F. Add all the ingredients to a food processor or blender and blend until the dates are chopped and the ingredients have combined a bit. Crumble the mixture onto a nonstick pad. Spread out evenly. Bake for 20-25 minutes. Allow to cool and store in an airtight container.

The food processor is very affordable. The Vitamix is definitely an investment but I use mine everyday and definitely think it's worth it!!
