Simple Vegan Sushi Salad

I LOVE sushi but don't always feel like putting in the effort to make it. This is why I started making sushi salads instead! Plus, it's an easy way to get more fresh greens in:)

This is very customizable, add whatever your favorite sushi fillings are!
Sushi Salad Recipe
• 2 cups of steamed rice (or quinoa if you prefer and have it) • 1 cucumber, chopped • 2 large carrots, chopped • 2 sweet potatoes • 2 cups of spinach, chopped (you can leave them whole if you’d rather. I just like them in small bites, I use scissors to cut them up) • 1 avocado • soy sauce/tamari/ or aminos • 2 sheets of nori (I cut these up too) Add 1 cup of rice with appropriate amount of water (depending on what kind of rice you use) to the rice cooker.
Set oven to 375.
Chop up sweet potato and spread onto nonstick surface. You can add seasonings to this if you want, I like mine plain though or with a bit of salt.
Cook potatoes for 20-25 min.
Once rice and potatoes have cooked and cooled down, add everything (except avocado and soy sauce) into a bowl and mix it up.
Serve with avocado and soysauce!!
