Loaded Vegan Burritos (Healthy and Oil Free)

Burritos don't have to be unhealthy to be delicious!! These burritos are packed full of nutrients! They are a great source of plant based protein, fiber, Vitamin A, Vitamin C, and so much more!
Loaded Vegan Burrito Recipe
1 sweet potato, chopped
1 cup of corn
1 cup of spinach
1 cup of black beans
1 cup of garbanzo beans
1 cup of refried beans
1/2 T cumin
1/2 T garlic powder
1 T paprika
salt and pepper to taste
salsa
1 avocado, sliced
Burrito wraps of choice or you can serve these ingredients over greens for a delicious salad!
*I love to use a variety of beans and have no problem eating the leftovers throughout the week. You can always just stick to one type of bean though:) You can use the entire can of beans for this recipe instead of limiting them each to 1 cup as well. You will have plenty to share or eat as leftovers throughout the week:)
Preheat oven to 350. Spread sweet potatoes on a nonstick mat and sprinkle salt, pepper, and paprika over them. Bake for around 15-30 minutes.
While sweet potatoes are cooking, drain and rinse black and garbanzo beans. Place in a pot with 1/8 cup of water, cumin, and garlic. You can add other seasonings to this like onion, chili, or fajita seasoning. I change it up depending on what I feel like at the time. I use about 1- 2 T of seasonings all together. Cook on medium, stirring occasionally. Cook for about 15 minutes, if the water evaporates, you can add a little more at a time. Switch to low and cover after 15 minutes. I just leave them like this until the potatoes are done.
I use the refried beans as a spread on the wraps. First, I like to heat them up in a skillet. You can add spices to this if you want. I sometimes add 1 t Sriracha and a sprinkle of garlic and onion powder. It's good with no spice as well!
I warm up my tortilla as well on the stove top but this is totally optional.
Once everything is cooked, it's time to assemble! I spread a layer of refried beans to the tortilla, then add a layer of spinach. Top with some beans and sweet potatoes. Add however much salsa and avocado you like as well (I like to top my burrito with mine but you can always stuff yours inside too). Roll up the burrito and enjoy:)
