Vegan Tofu Scramble

This is my boyfriend's favorite breakfast!! It is really easy to make and is very customizable. Add whatever veggies or spices you want! It's a great alternative to scrambled eggs because it is full of plant based protein and has zero cholesterol!!

Tofu Scramble
1 block of extra firm tofu, washed and pressed(I just squeeze it with a wash cloth to press it
1 handful of spinach
1/4 red onion
1 bell pepper
1 clove is Garlic, minced
1 t Paprika
1 t garlic powder
1/2 t onion powder
Salt and pepper to taste
1 t Tumeric
Chop all the veggies finely. Sauté the garlic and onion in a sauce pan with water for about 4 minutes then add the bell pepper. Sauté for another 2 minutes then crumble in the tofu. Add the rest of the spices and coat evenly. If the tofu does not have that yellowish look like eggs, you can add a bit more tumeric. Add the spinach and cook another minute or two. Serve immediately. Taste great with Ezekiel Bread and salsa:)
