Butternut Squash Gnocchi (vegan)

I love Gnocchi, I usually add it to my veggie soups but I decided to make them the star of this show. My boyfriend who is usually an incredibly slow eater, finished his plate in less than 5 minutes and went back for seconds!! This meal is packed full of Vitamin A and C, along with many other nutrients! You can use the butternut squash sauce on so many things-veggies, pasta, potatoes! It's so creamy and delicious:)

Butternut Squash Gnocchi Recipe

  • 1 butternut squash, peeled and chopped

  • 2 T curry powder

  • 1/3 red onion, chopped

  • 1 green apple, chopped

  • 5 cloves of garlic, minced

  • 1 package of gnocchi

  • 2 t Better than Bouillon (optional, could just replace with salt)

  • 1 green onion, chopped (for garnish)

  • Red chili flakes (for garnish)

  • Salt to taste

Preheat oven to 350 degrees F. Place butternut squash on parchment paper or a silicone mat. Sprinkle the curry powder over squash as evenly as possible and bake for 30 minutes.

While waiting on squash: add onion, green apple, and garlic to a saucepan. Add water to saute it in (I used 1/2 cup). Saute for about 8 minutes or until onion is translucent. Add this to a blender and set aside.

While sautéing onion, garlic, and apple mixture, bring a separate pot of water to boil. Once boiling, add the gnocchi for 3 minutes (or follow instructions on it's package). Drain gnocchi and set aside.

Once squash is done, add it to the blender with the garlic, onion, and apple. Add Better than Bouillon and/or salt. Blend until smooth. Taste for flavor and add more seasonings as needed.

In a bowl, combine and mix together the gnocchi and 3/4 of the butternut squash sauce.

Serve with green onions, red chili flakes, and salt to taste. I also recommend serving with some steamed veggies and a grain like brown rice or quinoa! I poured the remaining sauce over my steamed broccoli and brown rice....it was incredible!!

*This could also be made into a very delicious soup. Just add 1 can of coconut milk or cream and water (until desired consistency is reached)

*Some other spices that could work with this dish would be cinnamon and nutmeg! I wanted to make this dish more savory so I chose to not add these.
